The Cabernet Sauvignon for Cromas Gran Reserva has been selected from vineyards located in the foothills of Santa Lucia, where they benefit from optimal exposure and light intensity. The particularly extreme contrast between day and night temperatures found in these vineyards favours conditions for the slow ripening of the variety, with the period between full fruit formation and ripening reaching a full 75 days. Cabernet Sauvignon is harvested late, after the leaves have already changed colour, at the beginning of autumn.
Los Vascos wines are made with the same care as Bordeaux Grand Crus. The grapes are systematically monitored when they reach maturity in order to find the optimal balance between phenolic ripening and acidity. After careful sorting and removal, the grapes are placed in stainless steel tanks for fermentation. The pump ensures gentle extraction of the tannins. After malolactic fermentation, 50% of the wine is transferred to French oak barrels for a period of 12 months.
Ruby red colour with garnet highlights. Intense nose, with red fruits such as cherries and plums, accompanied by notes of cassis, spicy notes of cloves and cinnamon framed by well-integrated notes of wood and graphite. The palate is intense, with pleasant volume and acidity. It has distinctive but elegant tannins that give it structure and vibrancy. A structured and balanced wine.
