Pet Nat, or Pétillant-Naturel, is the name of sparkling wines where fermentation is finished in the bottle to " trap " the CO2, resulting in subtle and thin bubbles. Other distinctive characteristics are the non-addition of Liqueur de Tirage as added during the second fermentation to produce the champagne and the characteristic crown-type cap, which is reminiscent of a beer cap.
The Pet Nat of the Mylonas micro-winery comes from the versatile Savvatiano variety.
It is delicate and light sparkling, which is a highlight! Quite aromatic with a bouquet of pears, peaches, mango, pineapple, lemons, and bananas, where the aromas themselves are pleasantly detected on the palate, with a delightful and refreshing acidity and fruity aftertaste.
