Altan d'Aussières is a wine that perfectly expresses the classic varieties grown in Corbières (Syrah, Grenache and Carignan). Both vinification and aging are done in order to express the special characteristics of each grape variety. 40% of the grapes are vinified with carbonation to bring out the special aromatic characteristics of Carignan and Syrah. The remaining grapes are traditionally vinified in stainless steel and concrete tanks. To preserve the pure expression of the terroir, the wine is aged without the use of barrels to avoid any additional factor during vinification that could alter this pure expression. The wine matures for 6 months in the tank and then 8 - 10 months in the bottle, where the wine calms down and finally shows its character.
Beautiful concentration of fruit and aromas, a full red wine that offers a complex palette of flavors through the identity of the terroir, with aromas of dried herbs (thyme, sage, juniper and rosemary). Carbonation gives the wine a creamy, velvety and yet firm structure, with an aromatic palette of fresh, very ripe fruit (crushed berries, strawberries).
