Clear and bright, a soft apricot color with cherry highlights. Complex on the nose with floral notes (white flowers) combined with acacia honey and toasted brioche. On the palate, the wine develops a rich aromatic palette of summer fruits (peach, melon, red and black currant) with aromas of sour caramel. Round and powerful, with excellent balance and a generous mouthfeel with notes of toasted almonds and hazelnuts and a refreshing feel. Full in the mouth, intensely flavorful with hints of butterscotch on the finish.
In Château d’Aussières Rosé, the terroir of Corbieres is highlighted to the fullest. The winemaking process incorporates as little intervention as possible in order to express the native quality of the grapes. After the harvest, the grapes are immediately transferred to refrigerators in order to preserve their aromatic freshness, then they are transferred to the press where they remain for a few hours in order to extract the best aromatic duality. The grapes are then gently pressed. Only the best lots were reserved for this premium rosé. The must is then kept for 10-15 days at a temperature between 37-41°C before fermentation. 20% of the wines are fermented in new oak barrels to add complexity to the wine, while the rest is fermented in stainless steel tanks. The wine is then kept for 4 months on the lees using battonage method, before bottling.
