Pale straw-yellow colour, with green hues. Compound nose with notes of passion fruit, apple & pear. Round in the mouth with a lingering and lively aftertaste.
100% Sauvignon Blanc from vines with an average age of 9 years. The grapes are hand-picked early in the morning to preserve the subtle fruit flavours. The bunches are hand sorted, de-stemmed and pressed as gently as possible. They are then left for 6 hours in contact with the skin to extract the best components in the flavour. Once the clarification is naturally done before fermentation begins at temperatures of 10 - 14 ˚C for almost 1 month in stainless steel tanks to enhance the typical characteristics of the vine. After fermentation, the wine remains in lees for 5 months, clarified with bentonite for stabilization during preparation for bottling.
