Soave Classico represents the fresh version of Soave that the Pieropan family has been producing since the beginning of the 20th century. The grapes (85% Garganega and 15% Trebbiano Di Soave) come from privately owned vineyards located in volcanic soils, at an altitude of 100-300 meters above sea level and are grown certified organically.
Bright straw yellow color with greenish highlights. The delicate nose is reminiscent of almond blossoms and almond paste. Good depth of fruit on the palate, nicely balanced by a sweet acidity that enhances the long length.
Handpicked harvest in mid-September for Trebbiano Di Soave and in October for Garganega. Selection of the grapes and fermentation in concrete tanks with glass lining at a controlled temperature of 16-18ºC. Staying with the fine lees, bottling, and remaining for a month in the bottle before launching in the market.
